Dégorgement means “removing sediment” and refers to removing the sediment collected at the bottle neck. First, the bottle neck is immersed in an aqueous calcium chloride solution at minus 27 degrees to freeze the sediment. Opening the stopper in this state allows internal air pressure to eject the frozen sediment.
