The operation of gradually shaking bottles that had lain horizontally and turning them neck-down (sur pointe) to gather sediment produced during aging in secondary bottle fermentation at the neck. Over 1 and a half months, the bottles are rocked left and right with both hands almost daily, rotating them by 1/8, to gather sediment accumulated on their sides at the neck.
